Water is one of the four basic ingredients in beer and for this reason its importance should be recognized. We should always remember that beer consists of ninety percent water.

Pilsen beer, for example, owes most of its fame to its particularly good water. Milan isn't Plzen but can boast excellent water all the same. Additionally, Milanese ground water is stored in settling tanks before being passed to the water main.

At our brewery for safety reasons, (at times traces of chlorine - added by the sanitary authorities - may be found) the water used in our beer is passed through an active charcoal filter and we modify the hardness depending on the type of beer we want to produce.
